DESCRIPTION:
Celery seed has been in the
medicine world for thousands of years. In India it is cultivated in north –western Himalayas,
Punjab, Haryana, and western utter Pradesh in an area of about 5000 ha. Punjab
produces about 90% of the total Indian production.
This
oil is produced by steam distillation of the seeds and is used primarily for
flavoring of foods It has a pervasive, spicy, warmed very
persistent odor, produced primarily by two lactones, 3-n-butylphthalide and
3-n-butyl-4,5-dihydrophthalide (sedanenolide). Trace amounts are used in fine perfumes.
Celery seeds contain several
substances including volatile oils; flavonoids, chemicals that give plants
their colors and have antioxidant effects that may protect cells from damage;
coumarins, chemical compounds that help thin the blood; and linoleic acid, an
omega-6 fatty acid.
